Char Grilled Shark Steaks with Tomato Salad

| Shark Steak is very low in fat, ideal for the BBQ |
| Ingredients |

1 ½ tsps olive oil |

2 fresh bay leaves, chopped |

½ tbsp chopped fresh basil |
> |
½ tbsp chopped fresh oregano |

1 tbsp fresh parsley |

½ tsp finely chopped rosemary |

½ tsp fresh thyme leaves |

1 garlic clove crushed |

Drained sun dried tomatoes, chopped |

2 shark steaks |

½ tbsp drained small capers |

| Method |

Whisk the oil, herbs, garlic and sundried tomatoes in a bowl, pour the mixture into a shallow dish that is large enough to hold the shark steaks,season and brush the steaks with lemon juice, marinate for 1-2 hours. |

Heat a ridged pan until very hot. Lift the shark steaks out of the marinade, pat dry and cook for 5 mins each side. |

Bring the marinade to the boil add capers, spoon over the steaks and serve immediately on a layer of sliced beef tomatoes. |
