Char Grilled Shark Steaks with Tomato Salad

Shark Steak is very low in fat, ideal for the BBQ
Ingredients

>

1 ½ tsps olive oil

>

2 fresh bay leaves, chopped

>

½ tbsp chopped fresh basil

>

½ tbsp chopped fresh oregano

> 1 tbsp fresh parsley
> ½ tsp finely chopped rosemary

>

½ tsp fresh thyme leaves

>

1 garlic clove crushed

>

Drained sun dried tomatoes, chopped

>

2 shark steaks

>

½ tbsp drained small capers

>

Seasoning

>

Beef tomatoes
Method

>

Whisk the oil, herbs, garlic and sundried tomatoes in a bowl, pour the mixture into a shallow dish that is large enough to hold the shark steaks,season and brush the steaks with lemon juice, marinate for 1-2 hours.

> Heat a ridged pan until very hot. Lift the shark steaks out of the marinade, pat dry and cook for 5 mins each side.

>

Bring the marinade to the boil add capers, spoon over the steaks and serve immediately on a layer of sliced beef tomatoes.
