Scallop Marinated with Lime and Coriander

6 scallops |

Marinating liquid |

Juice of two limes |

Juice of 2 lemons |

1 small tblsp white wine vinegar and wine vinegar |

3 tsp sea salt |

3 tsp sugar |

2 tblsp olive oil |

1 tsp fresh dill |

Bay leaf |

Glove Garlic |

Crushed coriander seeds |

Salad leaves |

| Method |

Mix together all the marinating ingredients together in a bowl. |

Slice each scallop into three, place in the marinade and leave for 8 – 10min. |

Dress the salad leaves with olive oil, and serve with bread. |
