Scallop Marinated with Lime and Coriander

Ingredients

>

6 scallops

>

Marinating liquid

>

Juice of two limes

>

Juice of 2 lemons

> 1 small tblsp white wine vinegar and wine vinegar
> 3 tsp sea salt
> 3 tsp sugar
> 2 tblsp olive oil
> 1 tsp fresh dill
> Bay leaf
> Glove Garlic
> Crushed coriander seeds
> Salad leaves
Method

>

Mix together all the marinating ingredients together in a bowl.

Slice each scallop into three, place in the marinade and leave for 8 – 10min.

>

Dress the salad leaves with olive oil, and serve with bread.
