Lemon Sole Fillets Wrapped in Parma Ham

1 x Lemon Sole, filleted and skinned |

4 x slices of Parma Ham |

6 x cherry tomatoes |

Lemon or lime slices |

| Method |

Pre-heat the grill, take the Lemon Sole fillets and cut in half so you have 4 strips, season each side and fold in half. |

Take a slice of Parma Ham and wrap around the outside. |

Meanwhile brush the cherry tomatoes with olive oil and season and place under the grill the same time as the fish. |

Grill until evenly cooked on each side and slightly golden, approximately 3-5 minutes. |

Serve with lemon or lime slices. |
