Grilled Red Mullet with Garlic and Coriander Dressing

| Ingredients |

2 red mullet - cleaned and descaled |

Olive oil for brushing |

Herbs - fennel, dill, parsley and thyme |

1-2 dozen fresh bay leaves |

6 tbsp olive oil |

3 garlic cloves |
| > |
½ chilli, seeded and chopped |

½ lemon |

| Method |

Preheat the grill. |

Brush each fish with olive oil and stuff the cavities with the herb sprigs. Brush the grill pan with oil and lay the bay leaves across the top of the cooking rack. Place the fish on top and cook for 15-20 mins until cooked through, turning once. |

For the dressing heat the olive oil and add chopped garlic and chilli add the lemon juice and strain the dressing, add chopped parsley or coriander and stir to combine. |

Serve with seasonal salad. |
