1 Sea Bass 1.25kg

1 small bunch Spring Onions (cut into strips) |

30g piece of root ginger, peeled and cut into strips |

2 star anise |

4 tablespoons light soy sauce |

2 teaspoons honey |

4 tablespoons ginger beer |

Freshly ground black pepper |

| Method |

Cut 3 to 4 diagonal slices on either side of the fish. Lay the fish onto a large sheet of foil, sprinkle with the onions and ginger. Put the star anise inside the fish. |

Mix together with soy sauce, honey, ginger beer and pepper, pour over the fish. |

Wrap the fish in the foil making sure no juices can escape. Transfer to a large baking sheet. |

Cook in preheated oven for 15 – 20 min. Remove from the oven carefully unwrap. |

Using two fish servers transfer fish to a large serving dish and pour the juices over, divide the fish into four at the table. |
