Deep Fried Squid in Coriander and Pepper Batter

| Ingredients |

2lb cleaned Squid |

Vegetable oil for deep frying |

Batter: |

1oz corn flour |
> |
½ tsp of salt |

Ground black pepper |
| > |
1 tsp oil |
| > |
2 egg whites |
| > |
2 tbsp chopped fresh coriander |

To Serve: |

1 tbsp sesame oil |
> |
1 red chilli, thinly chopped |

1 clove of garlic, sliced |
| > |
1 piece of root ginger, peeled and chopped |
| > |
4 spring onions, thinly sliced |
| > |
Wedges of lime to serve |

| Method |

Open the squid out flat by slicing in half lengthways, cut into 1 by 2 inch slices. |

Make the batter, sift the corn flour, salt and pepper together in a small bowl, make a well and gradually incorporate the egg and oil to form a batter, stir in the chopped coriander. |

Heat the vegetable oil to150o; dip the squid into the batter and deep fry for 1- 2 minutes. Sprinkle with salt and pepper. |

Meanwhile heat the sesame oil in a frying pan add chilli, garlic, ginger and spring onions fry for a few seconds, sprinkle the chilli mixture over the deep fried squid. |

Alternatively you can substitute the squid for scallops or prawns. |
