New Forest Barramundi with Mango and Ginger

Ingredients

>

2 x 150g barramundi fillets

>

Olive oil

 

Sauce:

>

2 mangoes, peeled and diced

>

1 small red onion, diced

> 1 small cucumber diced
> 1 red chilli, thinly sliced
> 1-2 tbsp olive oil
> Juice of half a lime
> 1 tbsp shredded mint
> 1 tsp grated ginger
> Seasoning
Method

>

Heat the grill or a BBQ with a fish grill can be used Spray each fillet with olive oil to prevent sticking. Cook for 2 mins on each side.

Put the diced mango, red onion, cucumber and chilli in a bowl and toss to combine.

>

Mix the oil, lime juice, mint and ginger, season to taste, pour over the mango and cucumber, set aside to let the flavours infuse together.

>

To serve lace the salsa mix over the fillets.
