New Forest Barramundi with Mango and Ginger

| Ingredients |

2 x 150g barramundi fillets |

Olive oil |

Sauce: |
> |
2 mangoes, peeled and diced |

1 small red onion, diced |

1 small cucumber diced |
| > |
1 red chilli, thinly sliced |

1-2 tbsp olive oil |
| > |
Juice of half a lime |
| > |
1 tbsp shredded mint |
| > |
1 tsp grated ginger |

| Method |

Heat the grill or a BBQ with a fish grill can be used Spray each fillet with olive oil to prevent sticking. Cook for 2 mins on each side. |

Put the diced mango, red onion, cucumber and chilli in a bowl and toss to combine. |

Mix the oil, lime juice, mint and ginger, season to taste, pour over the mango and cucumber, set aside to let the flavours infuse together. |

To serve lace the salsa mix over the fillets. |
