The whole fish will be weighed whole and charged for as whole fish, after your choice of preparation there will be some waste and if you would like the bones for stock please mention this in the comments.
We are truly blessed on the South Coast to be surrounded by a superb array of flatfish. All the Flat Fish are very different from the texture of the flesh to the oil content and flavour of the meat. With Fresh local fish all over the menus it is a fantastic oppertunity to investigate somthing new.

- Cornish Hake

A splendid fish, which is loved by the Spanish. It great for cutting into steaks or filleting off into portions. 2-3Kg per fish

- Cornish Mackerel (M.S.C)

Rich in Omega 3. A full flavoured fish with a pleasing meaty texture. Hand line mackerel are now being landed at harbours around Cornwall. We have been recognised by the Marine Stwardship Council for the effort we have gone to, to supply good quality sustainable and well managed stocks of Hand & Line Mackerel.

- Cornish Sardines (M.S.C)

Cornish Sardines are day netted at Newlyn and they are perfect just scaled and gutted. They contain very fine bones. There is approximately 10 fish to a kilo.

- Dover Sole

Dover Sole is regarded as one of the finest of the flat fish. During the summer months the Dover has a firm meat & delicate flavour to it. Some Chefs will almost leave the specific fridge for a couple of days to intensify the flavour.
Each Dover is 280-400g and it is recommended that one fish is used per portion. Subject catch, there is a good possibility that there are larger Dovers availible.Price per kg = £20.12
- Gilt Head Bream

The most popular and highly regarded of the Sea Breams sourced from Greece. These 400-600g per fish are perfect for individual portions.

- Grey Mullet

The Grey Mullet have begun to get onto more restaurant menus. Ideally filleted off the bone and portioned up, the white meat is firm and becoming increasingly popular.

Gurnard has a good flavour with a firm textured flesh. Highly Recommended. The average size is 500 - 1kg.

- Herrings - Lyme Bay

Fresh Herrings when in season are not to be missed! These oily fish are excellent scaled & gutted or butterflied. Best grilled or baked whole, there is a traditional Scottish recipe where they are rolled in Oatmeal and fried in bacon fat. Try it, you might just like it!

A distinguished fish and very popular. The John Dory is a firm white meat, which holds a fantastic flavour. They are excellent served on the bone a fish per portion.

Very highly regarded. Lemon Sole has a sweet delicate flesh. Portion size 350-450g per fish.

- Local Wild Sea Bass

Local Wild Sea Bass is one of the Kings of the Sea. The delightful flavour stands out on its own, but also works well with stronger flavours. It is particularly popular in Thai cuisine, Sushi or on a BBQ during the warmer months! They range between 1-2kg, for a couple or more to share.

Megrim Soles are flat fish and part of the Dover and Lemon Sole family.These have a delicate flesh and are best served whole, after cooking the top skin will peel off nicely leaving you with a well presented and lovely tasting fish.

Monk Tail is a fabulous fish, which is very meaty and great for serving in a portion, cutting into medallions and making into kebabs. The Monk is firm and holds flavours brilliantly, it is very popular and deservedly so.

Plaice is easily identified by its distinctive orange spots. Plaice is great whole and these portioned size fish can be trimmed with the head taken off or left on.

A truly magnificent fish, deep red in colour and full of flavour. The Red Mullet are caught from the inshore waters of the local bays, off the south coast. Approx 250-350g per fish.

- Sea Bass - Farmed

These Sea Bass are a fantastic alternative to the Local Wild Bass. They are 400-600g per fish, a really good portion size. Available all year round, they are ideal for simply gutting & stuffing with herbs or filleting off the bone. Sea Bass are also perfect for grilling or pan-frying, which crisps up the skin nicely.

- Skate Wings - Blond Ray

The flesh of a skate has a very good flavour. The Lyme Bay blond wings come in various different sizes. The size of wings that are landed by the fishermen are around 500g-1Kg, per skinned wing. Recommended portion size is 280g.

Sprats are fantastic and when in season you must try them. Just left whole and served very simply, these are beautiful to eat and of course add to your oily fish weekly requirement.

Also known as Calamari, Lyme Bay Squid has a firm texture, and goes well with strong flavours. The Squid is very popular and is used in various different ways. It can be stuffed, cut into rings and battered, put in a salad or cooked on a BBQ, with ease.
