Scallops (Whole live, half shells and meat)
We have experienced buyers on each of the markets that look through the fish checking the quality. Each buyer has the knowledge and relationship with each vessel and the crew, when a customer is after a specific species we know who to contact to get hold of it.
The vessels catch is always put straight on ice to control the temperature of the fish. The better temperature control the fishermen have over their fish the premium price they will make, the largest part about buying fish at the markets is that it must be the absolute best quality for our customers.
Our factory manager will put a purchase list together for our buyers at the markets which start at 6am. They are all rising auctions except Plymouth which works from a falling clock. We communicate with each other finding out what each species is making at the different ports and what quantity they have. It is very fast and a little bit of an adrenaline rush when you are at the markets, meaning that our buyers must remain extremely composed to ensure that the highest quality of fish is bought.
